Creating caramelized white chocolate is tricky; time and temperature produce the Maillard Reaction, which is the chemical reaction of amino acids present in the chocolate, coupled with reducing sugars that gives it the characteristic color and flavor of caramel. Each batch is further hand tempered and cast into our logo Wm. bar. 31% white chocolate.
